A hole is drilled about 3-5 cm, one meter above the ground, preferably on the south side of the trunk.
A special tube is then inserted inside this hole to allow the lymph to flow.
Harvesting is done exclusively once a year, during the first weeks of March, from mature trees.

Properties of birch sap
Birch sap is a clear, odorless liquid rich in minerals such as calcium, potassium, magnesium, chromium, and selenium.
It is known for its diuretic and draining properties: it helps fight water retention, prevent kidney stones and cleanse the body of toxins.
In addition, several in vitro studies have confirmed the anti-inflammatory and pain-relieving properties of birch sap, given by the presence of betuloside and at monotropitoside.
